Brinji rice is an aromatic and moderately spiced rice!!
This one is my all-time family favorite.I learnt this rice from a close friend and I have been making it almost weekly ever since.The ingredients are pretty simple and it's easy to make.
Ingredients:
- Raw Rice - 1 cup
- Basmathi Rice - 1 cup
- Water - 4 cups
- Oil - 4 table spoons
- Chopped Veggies - 1 cup (I used Carrot, Beans, Potatoes)
- Onion - 1 (diced small)
- Ginger garlic paste (Blend 6 cloves garlic and 1 inch ginger)
- Tomato - 1 (diced small)
- Sambar powder - 2 teaspoons
- Garam Masala powder - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Rock salt as needed
Method:
- Soak Raw rice and Basmathi rice together for 30minutes.
- Heat the pressure pan. Add oil, when oil shimmers, add finely chopped onions.
- Saute the onion until it changes it color slightly. Add ginger garlic paste to it and saute for 2minutes.
- Now add the chopped veggies, stir them for a minute. Now, add sambar powder, turmeric powder, garam masala powder and stir well again.
- Now add soaked and drained rice.
- Give it a stir and add chopped tomatoes pieces.
- Saute the rice for one to two minutes, so that all the grains are coated with oil and masalas.
- Now add 5 cups water and required salt.
- Deglaze the pan and close the lid. Pressure cook for 3 whistles on medium flame.
- Let the pressure release naturally.
- After opening the pan, fluff up the rice well.
- Serve with curry or raitha of your choice.
Delicious Brinji rice is ready to be served.
