BRINJI RICE (Traditional Vegetable Rice)

Brinji rice is an aromatic and moderately spiced rice!! 

This one is my all-time family favorite.I learnt this rice from a close friend and I have been making it almost weekly ever since.The ingredients are pretty simple and it's easy to make.



 

Ingredients:

  • Raw Rice - 1 cup
  • Basmathi Rice - 1 cup
  • Water -  4 cups
  • Oil - 4 table spoons
  • Chopped Veggies - 1 cup (I used Carrot, Beans, Potatoes)
  • Onion - 1 (diced small)
  • Ginger garlic paste (Blend 6 cloves garlic and 1 inch ginger)
  • Tomato - 1 (diced small)
  • Sambar powder - 2 teaspoons
  • Garam Masala powder - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Rock salt as needed

Method: 

  1. Soak Raw rice and Basmathi rice together for 30minutes. 
  2. Heat the pressure pan. Add oil, when oil shimmers, add finely chopped onions.
  3. Saute the onion until it changes it color slightly. Add ginger garlic paste to it and saute for 2minutes.
  4. Now add the chopped veggies, stir them for a minute. Now, add sambar powder, turmeric powder, garam masala powder and stir well again. 
  5. Now add soaked and drained rice.
  6. Give it a stir and add chopped tomatoes pieces. 
  7. Saute the rice for one to two minutes, so that all the grains are coated with oil and masalas.
  8. Now add 5 cups water and required salt. 
  9. Deglaze the pan and close the lid. Pressure cook for 3 whistles on medium flame. 
  10. Let the pressure release naturally. 
  11. After opening the pan, fluff up the rice well. 
  12. Serve with curry or raitha of your choice.

Delicious Brinji rice is ready to be served.
